Indian Instant Pot Cookbook with Chandra Ram

Chandra’s father was born in India, and her mother is Irish.  “I grew up with one foot in America and one foot in India,” she says.   Her childhood summers included creating taste memories in India where pressure cooking is used to prepare the meals.  “The Instant Pot is a game changer for Indian food, ” Chandra explains, “It replaces a pressure cooker, slow cooker, yogurt maker, bread proofer and steamer.”
Chandra has several recipes for making a Lassie, a wonderful yogurt drink, in an Instant Pot.  It’s cooling and settles your stomach after you’ve had a lot of spices.  People are most familiar with Mango Lassie, made with canned Alphonso mango puree. The Alphonso mango is indigenous to India and is very sweet.

Here are Chandra Ram’s top three tips for the home chef:

  1. ®®Don’t be afraid to get out of your comfort zone
  2. Read cookbooks and their intros.  Watch what chefs do and do what they do.
  3. Sharpen your knives.
