You are what you eat. Period.
We are what our foods eat – this is called the food chain. We are products of evolution – which happened over centuries. We have tried to changed the food chain – and unfortunately created mayhem with our health. The American Academy of Pediatrics & the National Institute of heath just released new guidelines for child health. Children should all be tested for high cholesterol between ages 9 and 11 and again between 17 and 21 years of age, regardless of their family history – in other words – family history is not as an important indicator now as lifestyle habits.
Our diets have created havoc with our health. Its time to go back to our real roots – how our bodies were engineered by the omnipotent power – evolution.

She is the Founder of the International Society of Nutrigenetics/ Nutrigenomics, Past President and Founder and Chair of the World Council on Genetics, Nutrition, and Fitness for Health (WCGNFH). she is a physician and endocrinologist whose research at the National Institutes of Health (NIH) was on the nutritional aspects of genetic and endocrine disorders; evolutionary aspects of diet and fatty acids; and the importance of a balanced ratio of omega-6/omega-3 fatty acids in health and disease and in growth and development. She is the author of the fabulous MUST read The Omega Diet and has edited numerous books and journal supplements in addition to publishing over 345 scientific papers. Dr. Simopoulos explains to us the role of essential fatty acids in our life – why they are vital to our existence. Much of our chronic diseases – cancer, heart disease, COPD, asthma, arthritis, Alzheimer’s, auto- immune diseases – are thought to have a common cause – our diets. Our diet has changed from healthy Omega 3 gifted foods to being strong armed by a very unhealthy dominance by the Omega 6 fatty acids. We discuss why the oils we should be using are canola & olive oil, how the presence of Omega 6 worsens the influence of saturated fats, how we can easily increase our consumption of Omega 3 and reduce Omega 6s, why low fat diets do not work and why they are so unhealthy, how omega 3s fight obesity, & how Omega 6s contribute to obesity – how they actually alter fat cells. Dr. Simopoulos gives us many shout outs for exercise – how our obscene consumption of omega 6 fatty acids, and our physical inactivity epidemic both need to be addressed to reverse our health crises.
